Makes 24 mini cups or 9 muffin size
These mini muffins taste like a peanut butter candy walked into a muffin, only they’re much healthier. If you’ve never tried sunflower seed butter before, you’re in for a treat! It’s the seeds of a sunflower ground up like peanut butter.
INGREDIENTS
• 2 eggs
• 1 overripe, mashed banana
• 1 C sunflower seed butter (we recommend SunButter or Trader Joe’s brand)
• ½ tsp sea salt
• ½ C mini chocolate chips
• 1/3 C chopped pecans (Optional)
INSTRUCTIONS AND HOW KIDS CAN HELP
1. Beat eggs and banana together.
2. Once combined, beat in sunflower seed butter and salt.
3. Fold in chocolate chips and pecans.
4. Bake at 350 degrees for 8–10 minutes for mini muffins or 13–15 minutes for regular size. (Bubbling oil on the edges from sunflower seed butter may make them appear not done; take them out and let them cool once the middle is not spongy.)
5. Store chilled for a week or more.
