Sometimes the best way to eat a salad is to put a steak on it! It’s the perfect “eat like a dinosaur” meal: both a T-Rex and a Triceratops could share it! This is one of our favorite dinners, and it will make you believe that salad can be delicious. We always ask for seconds. We recommend you eat it with our Raspberry Dressing.
INGREDIENTS
• 1½ lb flank steak
• ½ tsp salt
• ¼ tsp pepper
• 4 C baby mixed greens
• 1 pt of strawberries, sliced
• 1 bell pepper, diced
• 1 carrot, sliced into rounds
INSTRUCTIONS AND HOW KIDS CAN HELP
1. Sprinkle steak with salt and pepper.
2. Add room-temperature flank steak to hot pan and cook over medium-high heat about 6 minutes per side for medium rare.
3. Allow steak to rest uncovered for 10 minutes, slice steak into ½-inch strips on the bias.
4. Toss all ingredients, including meat.
