MAPLE CHICKEN SALAD

Do you like maple syrup on your pancakes? Well then, you’ll probably love it on your chicken! You might think it sounds weird, but we thought it sounded delicious . . . and you betcha it is!

You can use this salad to make boats just like the Fish in a Boat. We think you’d like it if you put the salad in an apple boat! Just cut the apple in half, remove the core, and spoon your chicken in it! Our favorite way to eat Maple Chicken Salad is to put it on a romaine lettuce leaf because it’s crispy, fresh, and able to hold lots of chicken!

If you use regular mayonnaise instead of our Bacon Mayonnaise, consider adding some crumbled bacon into your salad—it really brings the flavors together.

INGREDIENTS

• 1 chicken, cooked and shredded (you could use canned chicken breast, but this is a great recipe for leftover chicken)
• ¾ carrot, shredded
• ¼ dried cranberries
• 3 Tbsp Bacon Mayonnaise
• 1 Tbsp maple syrup
• pinch of salt
• dash of black pepper

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Mix together chicken, carrots, and cranberries.
2. Add mayonnaise, syrup, salt (taste first, the bacon mayonnaise is already salty), and pepper.
3. Mix until combined, and enjoy!
