EGG SALAD

One of the members of our family had never even heard of egg salad (if you were here with us you could see us pointing at Matt). Now he loves how quick it is to make, and delicious too! It’s so easy, and kids can help with every step; Cole even makes it by himself sometimes. Eggs, pickles, and mayonnaise—what’s not to love?

Finian (of course) loves to use an avocado as his egg salad boat, but Cole likes to eat egg salad with tomatoes. We think you should try a lettuce boat with a slice of bacon and tomatoes. Mmmm . . . yum!

INGREDIENTS

• 8 eggs, hard-boiled and peeled
• ½ C mayonnaise
• 1/3 C pickle relish (we recommend Bubbies brand)
• 1 tsp Dijon mustard
• ¼ tsp salt
• ¼ tsp pepper

INSTRUCTIONS AND HOW KIDS CAN HELP

1. Slice or mash eggs to break up egg whites a bit.
2. Add remaining ingredients to bowl.
3. Stir and mash all ingredients together until thoroughly combined.
