This kid-friendly version of the tropical classic goes perfectly with fajitas and guacamole.
SERVES 2
• 1 cup water
• 1 tablespoon unrefined coconut oil at room temperature
• 1 cup fresh coconut milk
• 12 ounces frozen pineapple cubes
• Pineapple wedges
1. Combine water, coconut oil, and coconut milk in a blender. Puree until smooth. Add pineapple cubes and puree until thoroughly combined.
2. Pour into chilled glasses and garnish with pineapple wedges.
