Greek Salata à la Paleo

Juicy tomato, crunchy cucumber, zesty lemon, and a sprinkle of oregano make for a Paleo-friendly Greek salad. You’ll find this salad to be a refreshing way to start your meal.

SERVES 4

• 2 large red beefsteak tomatoes, diced
• 1 large cucumber, peeled and coarsely chopped
• 1 large green bell pepper, chopped
• 2 tablespoons minced fresh oregano
• 1 tablespoon freshly squeezed lemon juice
• 3 tablespoons extra virgin olive oil
• Freshly ground black pepper, to taste

1. Combine tomatoes, cucumber, bell pepper, and oregano in a large bowl.
2. Drizzle with lemon juice and oil. Toss to combine.
3. Sprinkle with freshly ground black pepper.
