Serves 3
• 1 whole cinnamon stick
• 6 cardamom pods (crushed for stronger taste)

• 4 whole black peppercorns
• 5–6 thin slices fresh ginger

• 31⁄2 cups water
• 2 tea bags (black tea)
• 2 tablespoons raw organic honey
• 11⁄2 cups coconut milk

1. In a medium saucepan, combine cinnamon, cardamom, cloves, peppercorns, ginger, star anise, and water. Bring to a boil.

2. Turn down heat and simmer for 5–7 minutes until fragrant, then remove from heat, turn off burners, and let cool/steep for 10 minutes.

3. Add tea bags, return to stove on medium-high heat, bring to a boil, and then remove from heat completely, and let steep another 2–3 minutes.

4. Add honey and coconut milk and serve into mugs through a fine mesh sieve.
