YIELD: about 1¼ cups | PREP TIME: 5 minutes | CHILLING TIME: 1 hour

• ¾ cup unsweetened Dairy-Free Yogurt or coconut cream (scooped from 1 [14-ounce] can chilled full-fat coconut milk)
• ½ cup grated cucumber (¼ pound, or about 1 small), extra liquid squeezed out
• ¼ cup fresh mint, minced
• 2 tablespoons fresh lemon juice
• ¼ teaspoon salt
• Pinch of ground black pepper

1. Combine all of the ingredients in a small mixing bowl.
2. Chill for at least 1 hour before serving and use within 2 days.

AIP Modification: Use coconut cream instead of yogurt and omit the black pepper.
Nut-Free Modification: Use coconut cream instead of yogurt.
