SWEET POTATO SOUP

YIELD: 4 to 6 servings | PREP TIME: 10 minutes | STOVETOP: 20 minutes

• 1 tablespoon avocado oil or coconut oil
• 1 large onion, diced
• 5 pounds sweet potatoes (about 6 large), peeled and chopped
• 2 teaspoons salt
• 1 teaspoon ground coriander
• 1 teaspoon ground cumin
• 1 teaspoon smoked paprika
• ¼ to ½ teaspoon chipotle chili powder
• ¼ cup fresh lime juice (about 2 limes)
• Chopped fresh cilantro, for garnish

1. In a large heavy-bottomed pot, heat the oil over medium-high heat. When the oil is hot, add the onion and sauté, stirring occasionally, for 6 to 8 minutes, until golden brown and softened. Add the sweet potatoes, salt, coriander, cumin, smoked paprika, and chipotle powder.
2. Add 6 cups of cool water and bring to a simmer. Simmer for 10 to 12 minutes, until the sweet potatoes are very soft. Puree until smooth, either in batches in a blender or with an immersion blender. Stir in the lime juice and garnish with cilantro.
