Commercial mayonnaise is often full of preservatives and offers you very little in terms of nutrition. However, this homemade version using mild-flavoured avocado oil is the opposite. It tastes just like traditional mayo but is incredibly healthy and delicious.

2 egg yolks
juice of ½ lemon
120ml avocado oil
pinch of sea salt and freshly ground black pepper
1. Place the egg yolks and lemon juice in a food processor and whiz to combine, then begin to pour in the avocado oil very slowly, tablespoon by tablespoon.
2. As the avocado oil gradually mixes in, it will begin to thicken and create a mayo-like consistency. Add more oil as needed to help thicken it even more, then season to taste.
3. Season with salt and pepper and place the mayo in a container and refrigerate.
