COOKED APPLES IN MAPLE SYRUP WITH AN ALMOND CRUMB

This is the perfect warming, filling breakfast to eat on a cold winter’s morning. Or it could make a very tasty pudding too.

4 apples, peeled, cored and roughly chopped

100ml water

1 teaspoon ground cinnamon

2 tablespoons maple syrup

100g almond flour

a handful of fresh blackberries

1. Preheat the grill to its highest setting.

2. Place the apples in a saucepan with 100ml water, then add the cinnamon and 1 tablespoon of maple syrup. Bring to the boil, cover and simmer for about 7 minutes, then remove the lid and cook for a further minute to allow any excess liquid to evaporate.

3. Divide the cooked apple between four ovenproof serving bowls and cover each one with almond flour and a drizzle of maple syrup. Place under the grill for a minute or so, being careful not to burn.

4. Serve with a few fresh blackberries on the side.

Almond flour has a wonderful texture and flavour, plus it’s very low in carbs, full of manganese and vitamin E and monounsaturated fats, and contains a very healthy amount of protein.
