Chocolate orange & mint chip truffles

Impress guests with these super-simple truffles that look elegant but use ingredients you probably have lying around in your pantry.

YIELD

1 dozen truffles

BASE FOR ONE FLAVOR

2 tablespoons coconut oil

3 tablespoons coconut butter or coconut manna (cream concentrate)

2 tablespoons almond butter

1/4 teaspoon pure vanilla extract

MINT CHIP FLAVOR

2 teaspoons mint extract

1 teaspoon pure maple syrup

1 tablespoon cacao nibs

2 tablespoons unsweetened cacao powder for the coating

CHOCOLATE ORANGE FLAVOR

2 tablespoons unsweetened cocoa powder

2 teaspoons pure maple syrup

Zest of one orange (1 teaspoon set aside for the coating)

2 tablespoons shredded coconut for the coating

Make double the base if you want to make both flavors at once!

SPICE IT UP

Add a pinch of cayenne pepper to the chocolate orange flavor to give them a kick!

2-WAYS

To make both flavors, either split the base and use 1/2 of the flavoring ingredients, or double the base and make one batch of each!

Place the coconut oil, coconut butter, almond butter, and pure vanilla extract into a bowl, and combine until smooth. Add your selected flavor ingredients. Mix thoroughly.

The mixture will be soft, so place it in the freezer for about 10 minutes or until you can form the batter into 1-inch balls with your hands. Roll each ball in the coating for your flavor.

Set the truffles on a plate, and refrigerate to solidify.

Serve chilled.
