BBQuick Ribs

Serves 2-3 humans


2 1/2 lbs pasture-raised pork spare ribs
coarse ground sea salt, to taste
coarse ground black pepper, to taste
2 cups filtered water
BBQ Sauce


Cut ribs into 4-rib sections. Season with sea salt and black pepper.
Heat pressure cooker over medium heat and sear pork ribs on both sides. This may take a few rounds.
Return all ribs to the pressure cooker, add water to cover. Add lid of pressure cooker, increase heat to high, bring to full pressure.
Reduce heat to medium and cook for 10 minutes.
Remove pot from heat and allow pressure to decrease naturally.
Baste ribs with BBQ Sauce and serve.


Alternate Cooking Instructions (no pressure cooker)
Preheat the oven to 350F.
Wrap your rack of ribs in foil and roast for 1.5 hours.
Remove ribs from the oven and let cool for 20 minutes. Serve with BBQ Sauce.
