Serves 2-4 humans
3 cups organic mixed baby greens
1 red bell pepper, chopped
1/2 onion, chopped
2 garlic cloves, minced
1 avocado, chopped
2 Persian cucumbers, quartered & chopped
coarse ground sea salt, to taste
dried oregano, to taste
extra virgin olive oil, to taste
organic apple cider vinegar, to taste
Add all ingredients to a large mixing bowl. Toss to combine.
Taste if more sea salt, oregano, olive oil or vinegar is necessary.
Plate and serve.
