Tzatziki Dipping Sauce

Makes 1 cup

This tzatziki sauce may be different from what you’re used to. Normally tzatziki uses dairy and cucumbers and has a thick consistency. This tzatziki, however, is made with zucchini giving it a lighter consistency but with the same great flavor.


1 zucchini, chunked
1 garlic clove
1/2 cup extra virgin olive oil
1/2 lemon, juiced
coarse ground sea salt, to taste


Add zucchini and garlic to a food processor and process for 3–5 seconds, or pretty much until the blade stops chopping.
Scrape veggies down the sides. Pour in olive oil, lemon juice and add a pinch of sea salt. Process until smooth.
Serve over any ground or sliced meat or Dipping Sliders.
