This little concoction might not win any beauty contests, but it’s my favorite addition to a burger and it makes me jump out of bed in the morning to eat it with fried eggs. It’s spicy and mushroom-y, and our family absolutely adores it.
Prep time 15 minutes
Makes about 1 quart (946 ml)
2 medium sweet onions, halved and thinly sliced
1 pound (455 g) brown mushrooms, sliced
1 chipotle pepper, from a can of chipotles in adobo sauce, minced
1/2 teaspoon sea salt
1 Place all of the ingredients into a 4-quart (3.8 liter) slow cooker. Cover and cook on high for 3 to 4 hours, stirring once or twice during cooking.
2 Serve alongside burgers, eggs, or grilled meat—or even alone.
