Easy Italian Chicken Sausage and Peppers with Marinara

I always keep some precooked, uncured Italian sausages around because they make such fast, easy meals. Our family loved these saucy sausages and peppers over “Baked” Sweet Potatoes, but Cauliflower Rice (shown here and here) or Squash Noodles would also be good options.

Serves 6

12 ounces (340 g) precooked Italian chicken sausages, cut into 1-inch (2.5 cm) pieces
1/2 medium onion, thinly sliced
2 bell peppers (any color), thinly sliced
2 cups (500 g) Basic Marinara
2 tablespoons (30 ml) balsamic vinegar
Cauliflower Rice (shown here and here), Squash Noodles, or “Baked” Sweet Potatoes, for serving

1 Place all ingredients into a 2- or 4-quart (1.9 or 3.8 liter) slow cooker. Stir to cover everything with marinara.
2 Cover and cook on low for 5 hours.
3 Serve with Cauliflower Rice, Squash Noodles, or “Baked” Sweet Potatoes.
