Spicy Sliced Sweet Potato

No need for sides to be boring. Spicy Sliced Sweet Potato will make your taste buds dance. Full of Eastern flavors, this side can be ready in minutes.

Serves 4

1 medium yam, narrow not fat, peeled and thinly sliced, about 2 cups

1 cup fresh orange juice (fresh makes a difference)

¼ cup water

½ tsp ground coriander

½ tsp ground cumin

¼ tsp ground cinnamon

1 Tbsp unsalted butter

Kosher salt

  1. In a medium saucepan of boiling salted water, blanch the yam slices for 1 minute. Drain and set aside.
  2. In the same pan, combine the orange juice, water, coriander, cumin, and cinnamon. Add the yams and simmer over moderate heat, stirring occasionally, until just tender, about 3-5 minutes.
  3. Remove from saucepan and stir in butter. Season with salt to taste. Serve.
