1 medium yam, narrow not fat, peeled and thinly sliced, about 2 cups
1 cup fresh orange juice (fresh makes a difference)
¼ cup water
½ tsp ground coriander
½ tsp ground cumin
¼ tsp ground cinnamon
1 Tbsp unsalted butter
Kosher salt
- In a medium saucepan of boiling salted water, blanch the yam slices for 1 minute. Drain and set aside.
- In the same pan, combine the orange juice, water, coriander, cumin, and cinnamon. Add the yams and simmer over moderate heat, stirring occasionally, until just tender, about 3-5 minutes.
- Remove from saucepan and stir in butter. Season with salt to taste. Serve.
