Garlic Aioli

MAKES: 1 cup (240 ml) | PREP TIME: 5 minutes


1 large egg

1 scant cup (220 ml) avocado oil

1 teaspoon Dijon mustard

½ teaspoon freshly squeezed lemon juice

3 cloves garlic, finely chopped

pinch of fine-grain sea salt and freshly ground black pepper


Place all the ingredients in a tall container. Place an immersion blender in the bottom of the container and turn it to high speed. The mixture will begin to thicken. As it thickens at the bottom, slowly pull the immersion blender upward to thicken the mixture throughout. (This process should take no more than 30 seconds.) Serve with Dill Butternut Squash Fries
