Coconut Butter

MAKES: 1 cup (250 grams) | PREP TIME: 8 to 15 minutes


1½ cups (75 grams) unsweetened coconut flakes


Place the coconut flakes in a food processor and process until the flakes break down into a smooth texture, stopping occasionally to scrape down the sides. This can take anywhere from 8 to 15 minutes. The longer it purees, the more it will develop a butter-like consistency. Store in the refrigerator in sealed container for up to 1 month. Coconut butter becomes hard when cold, but it can be softened or melted over heat in a small saucepan.
