Ingredients
1 cup water (240 ml)
1 teaspoon fine-grain sea salt, plus more to taste
1 large avocado, peeled and pitted
juice of 1 lime
freshly ground black pepper, for garnish (optional)
Process
- Combine the water and 1 teaspoon salt in a small bowl or container just large enough to hold the avocado. (A soak in salt water will slow the process of the avocado turning brown.)
- Place the peeled and pitted avocado in the salt water. The avocado should be submerged in the salt water; if not, add a little more water and salt. Let it soak for 10 to 15 minutes. Remove from the water and place in a food processor. Add the lime juice and season with salt. Process until you have a smooth mousse. It can be piped with a pastry bag or by using a snipped corner of a resealable plastic bag. Serve with a sprinkling of pepper, if desired. Store in the refrigerator in a sealed container for up to 5 days.
