MAKES: 4 (2-cup/480-ml) servings | PREP TIME: 10 minutes
10 cups (1.4 kg) diced seedless watermelon, chilled
juice of 2 limes
10 fresh mint leaves balsamic vinegar, for garnish
- In a blender, puree the diced watermelon with the lime juice.
- Set a fine-mesh strainer over a large bowl and strain the watermelon puree. Press lightly on the watermelon pulp to extract the juice without pushing the pulp through the strainer.
- Rinse out the blender and return the strained watermelon to it. Blend in the mint leaves. Transfer to a punch bowl or pitcher.
- Garnish with a few drops of balsamic vinegar and serve cold.
