Ingredients
½ cantaloupe, honeydew, or other melon of your choice (about 10 ounces/280 grams)
12 bay scallops (about 8 ounces/225 grams)
3 slices bacon, cut crosswise into 12 equal strips
Process
- Preheat the oven to 400°F (205°C). Line a rimmed baking sheet with parchment paper.
- Use the large end of a melon baller to scoop out 12 melon balls.
- Wrap a strip of bacon around each scallop, overlapping the ends. Place a bacon-wrapped scallop onto a metal or wooden skewer through the overlapping ends to keep the bacon from falling off. Then add a melon ball. Repeat until you have 3 melon balls and 3 scallops on each skewer.
- Place the 4 skewers on the prepared baking sheet. Bake for 15 minutes, then turn the skewers over and bake for another 10 minutes, or until the bacon is crisp and evenly cooked.
