This sweet, spicy and tangy salad is a perfect accompaniment to BBQ!
1 cup/150 g red onion, chopped
4 cups/720 g seedless watermelon, chopped
2 cups/360 g cucumber, partially peeled, chopped
1 serrano pepper, minced
2 tbsp/3 g fresh mint, chopped
2 tbsp/30 ml fresh lime juice
3 tbsp/45 ml extra-virgin olive oil
¼ tsp sea salt
¼ tsp pepper
Place red onion in a bowl and cover with filtered water and allow to sit for 10 minutes, while you chop the rest of the ingredients. Drain. Combine onion, watermelon, cucumber, pepper, mint, lime juice, olive oil, salt and pepper. Cover and chill in refrigerator for 1 hour to allow flavors to meld together.
