Ingredients
4 ounces coconut milk
1 tablespoon tapioca flour
Вј cup lemon juice
1 teaspoon lemon zest
Вј cup coconut milk
2 cups fresh raspberries
1 cup fresh blueberries
Вј cup palm sugar
Preparation
1.В В Adjust an oven rack seven inches from the broiler element and heat the broiler. Whisk the coconut milk, lemon juice, lemon zest, and tapioca flour together in a medium bowl until smooth. Place in a saucepan over medium high heat and bring to a boil, whisking continuously until thickened. Remove from heat.
2.В В Scatter the berries in a 1-quart, broiler-safe gratin dish or tart pan. Spoon the coconut milk mixture over the berries and gently spread it to cover the berries completely in an even layer. Sprinkle the palm sugar over the top.
3.В В Broil until the palm sugar is bubbly and evenly caramelized (2 to 4 minutes). Serve immediately.
