No-Crust Tomato & Spinach Quiche
(Total Time: 35 MIN| Serves: 6)
Ingredients:
1 cup diced Tomatoes
3 cups chopped Spinach
¼ cup grated Parmesan Cheese
½ cup Milk
3 Green Onions, chopped
12 Eggs
½ Tomato, sliced
½ tsp Garlic Salt
¼ tsp Pepper
1 ½ cups Water
Directions:
- Pour the water into the Instant Pot.
- Grease a baking dish with cooking spray.
- Combine the diced tomatoes, green onions, and spinach, in it.
- Beat the eggs along with the milk, salt, and pepper.
- Pour this mixture over the spinach and tomatoes.
- Sprinkle with parmesan cheese and top with tomato slices.
- Place the baking dish on the rack and close the lid.
- Cook on HIGH for 20 minutes.
- Wait 10 minutes before releasing the pressure quickly.
- Serve and enjoy!
