Cottage Cheese and Pine Nut Egg Pie

Ingredients:
6 Eggs, beaten
2 tbsp. chopped Pine Nuts
1 Tomato, diced
¼ cup Heavy Cream
2 tbsp. chopped Basil
¼ cup grated Parmesan Cheese
1 cup Cottage Cheese
Pinch of Salt
Pinch of Pepper
1 ½ cups Water
Directions:
- Pour the water into the Instant Pot and lower the trivet.
- Combine all of the ingredients in a large bowl.
- Grease a baking dish and pour the mixture inside.
- Place the dish inside the IP and close the lid.
- Cook for 30 minutes on MANUAL.
- Release the pressure quickly.
- Serve and enjoy!
