Avo Bacon Muffins

(Total Time: 40 MIN| Serves: 16)

Ingredients:
5 Bacon Slices, cooked and crumbled
5 Eggs, beaten
1 ½ cups Coconut Milk
2 Avocados, diced
4 ½ ounces grated Cheese
½ cup Almond Flour
2 tbsp. Butter
¼ cup Flaxseed Meal
1 ½ tbsp. Phylum Husk Powder
1 ½ tbsp. Lemon Juice
3 Spring Onions, diced
1 tsp Oregano
1 tsp minced Garlic
1 tsp Onion Powder
1 tsp Salt
Pinch of Pepper
1 tsp Baking Powder
1 ½ cups Water

Directions:

  1. Pour the water into the Instant Pot and lower the trivet.
  2. Whisk together the wet ingredients.
  3. Gradually and gently, stir in the dry ingredients until smooth.
  4. Stir in the avocado, bacon, onions, and cheese.
  5. Divide the mixture into 16 small or medium muffin cups.
  6. Place half of them inside your IP. Close the lid and cook on HIGH for 12 minutes.
  7. Do a quick pressure release.
  8. Repeat the process one more time.
  9. Serve and enjoy!
