Spiced Salmon with Salsa
This Spiced Salmon with Salsa is a delicious, sweet, and spicy dish that can be completed in less than 30 minutes, yet it tastes like it required hours of preparation. Mango salsa is included here, though a variety of salsa flavors will work too. For example, the Slow-Cooked Spicy Salsa from Chapter 6 would be a super spiced-up substitute! The cilantro, jalapeño, and Mexican hot sauce deserve all the credit for torquing up the heat in this recipe—increase the hot ingredients to make it even more of a scorcher!
Serves 4–6
For Mango Salsa:
1 large mango, peeled and diced
1⁄4 cup red bell pepper, finely chopped
1⁄4 cup red onion, finely chopped
2 tablespoons cilantro, chopped
1 tablespoon fresh lime juice
1 tablespoon raw organic honey
1 small jalapeño, seeded and minced
For Spiced Salmon:
1⁄3 cup raw organic honey
2 tablespoons Mexican hot sauce
1 tablespoon fresh lime juice
4 (6-ounce) salmon fillets, rinsed and patted dry
- For Mango Salsa: Stir together the mango, pepper, onion, cilantro, lime juice, honey, and jalapeño, and refrigerate until needed.
- For Spiced Salmon: Combine honey, hot sauce, and lime juice and brush evenly over salmon fillets. Place salmon (flesh side down) on a grill (sprayed thoroughly with cooking spray) over medium coals, and cook 2–3 minutes until lightly blackened. Flip and cook for another 8–10 minutes, reapplying sauce as needed. Once cooked, remove from heat and top with prepared mango salsa.
