Pulled Pork Picante
An absolute breeze in a slow cooker, this pepped-up pork dish guarantees super satisfying results! 1 medium onion, diced
1 teaspoon dried oregano
2 dried bay leaves
1 chipotle in adobo, minced
1 tablespoon adobo sauce
1 (28-ounce) can crushed tomatoes
1 (14.5-ounce) can whole tomatoes in purée
2 teaspoons sea salt
1⁄2 teaspoon ground pepper
3 pounds boneless pork shoulder, trimmed and halved
- Combine onion, oregano, bay leaves, chipotle, adobo sauce, tomatoes, salt, and pepper in a 5-quart slow cooker. Add pork shoulder, and mix all ingredients well. Cover and cook on high for 6 hours.
- Remove pork from slow cooker and shred meat with a fork. Place shredded pork back into the slow cooker and mix with sauce. Discard bay leaves and serve warm.
