Peppery Pork Roast

This Peppery Pork Roast cooks in almost no time, making it a quick and delicious weeknight dinner. Simple seasonings like chili powder, paprika, cumin, ginger, thyme, and black pepper add a bit of a bite and a whole lot of flavor to this pork without overpowering it! Enjoy this hearty meat alongside a medley of root veggies and a fresh green salad.
Serves 6

2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon ground cumin
1 teaspoon ground ginger
11⁄2 teaspoons dried thyme
1 teaspoon black pepper
2 pounds pork tenderloin (2 [1-pound] roasts)

  1. In a small bowl, mix together chili powder, paprika, cumin, ginger, thyme, and black pepper. Rub spice mix onto the pork. Place meat in a baking dish, cover, and refrigerate for 2–3 hours.
  2. Preheat the grill to medium heat. Cook for 30 minutes, or to desired tenderness, turning to cook evenly.
