Zesty Mandarin Salad with Ginger Vinaigrette

Ginger, spice, and everything nice is what this Zesty Mandarin Salad with Ginger Vinaigrette is made of! The delicious Asian-infused dressing elegantly coats the sweet and refreshing citrus salad. The ginger provides the zest and thickens the dressing quite a bit. This vinaigrette is a great accompaniment to any salad or slaw! It can also be used as a marinade or dipping sauce for grilled chicken or steak.
Yields 1 cup

For Ginger Vinaigrette:

1⁄2 cup extra-virgin olive oil
1⁄4 cup champagne vinegar
1⁄4 cup Dijon mustard
2 tablespoons freshly grated ginger
1⁄2 teaspoon raw organic honey
1⁄2 teaspoon dried parsley
1⁄2 teaspoon sea salt
1⁄2 teaspoon pepper
Pinch cayenne pepper
For Zesty Mandarin Salad:

3–4 cups field greens
1⁄2 cup mandarin oranges
1⁄4 cup almond slices

  1. For Ginger Vinaigrette: Place all ingredients in a small mixing bowl and mix with an immersion blender (or whisk) until well blended and frothy. Store in an airtight container and shake well before each use.
  2. For Zesty Mandarin Salad: Toss the field greens, oranges, and almonds together gently in a medium salad bowl and drizzle with 2–3 tablespoons of the Ginger Vinaigrette.
