ROASTED SWEET POTATOES

This is the classic way to prepare sweet potatoes, in my opinion. It’s so simple, and you can serve it with almost any protein plus a green vegetable, and you have a complete Paleo dinner without having to do much planning. It’s like the Emergency Pasta (here) of Paleo carbs, if you will. SERVES 4

PREP TIME: 5 minutes

COOK TIME: 35 minutes

4 sweet potatoes, peeled and chopped

1 onion, quartered and divided

2 garlic cloves, minced

3 or 4 tablespoons extra-virgin olive oil

  1. Preheat the oven to 425°F.
  2. In a large bowl, toss the sweet potatoes with the onion, garlic, and olive oil.
  3. Transfer to a baking sheet, and roast for 30 to 35 minutes, or until the sweet potatoes are fork-tender and slightly browned, and serve.

VARIATION 1 BALSAMIC-ROASTED SWEET POTATOES: Toss the sweet potatoes, onion, garlic, and olive oil with ¼ cup Balsamic Vinaigrette (here). Continue with the recipe as written.

VARIATION 2 SPICY ROASTED SWEET POTATOES: After transferring the sweet potatoes to a baking sheet, sprinkle with ¼ teaspoon ground cayenne pepper. Continue with the recipe as written.
