Sweet And Savory Roasted Cauliflower
1 medium head of cauliflower, trimmed into small, bite-size pieces
1 tablespoon olive oil
1 teaspoon ground cumin
ВЅ teaspoon freshly cracked black pepper
Вј cup ghee or coconut oil
Вј cup dates, pitted and finely chopped
1 tablespoon minced fresh rosemary
1 cup pitted black olives, cut in half
- Preheat the oven to 400В°F.
- Coat the cauliflower pieces with the olive oil, cumin and pepper. Place on a sheet pan in a single layer.
- Place the sheet pan on the top rack of the oven and roast the cauliflower for 15 minutes, or until lightly browned.
- Meanwhile, heat the ghee in a small saucepan over medium heat. When the ghee is melted, add the dates and rosemary and cook for 2-3 minutes. Use a spatula to separate the date bits in the ghee as they cook. Remove from the heat and stir in the olives.
- Remove the cauliflower from the oven and transfer it to a medium-size serving bowl. Add the date-olive mixture and toss gently.
NOTES: Any kind of olive will do here, so feel free to use what you have on hand. For ease of cleanup, we suggest coating your sheet pan with aluminum foil first!
