Pan-Fried Okra
1 tablespoon coconut oil
2 teaspoons minced fresh ginger
2 cloves garlic, peeled and minced
1 pound okra, cut in half lengthwise
1 tablespoon coconut aminos
1 teaspoon freshly squeezed lemon juice
Freshly cracked pepper, to taste
- Heat the coconut oil over high heat in a wok.
- SautГ© the ginger and garlic, and when the garlic begins to brown, add the okra and toss frequently for about 8 minutes.
- Add the coconut aminos and lemon juice and cook until the liquid is nearly gone.
- Season with freshly cracked pepper and serve.
NOTES: Keep the okra whole to avoid the slimy texture and to cut down on prep time.
