Egg Salad
12 large hard-boiled eggs, peeled and chopped
1 cup pitted black olives, sliced
ВЅ cup finely chopped white onion
Вј cup Paleo Mayonnaise (see recipe)
1 tablespoon Dijon mustard
1 teaspoon apple cider vinegar
ВЅ teaspoon garlic powder
Salt and freshly ground black pepper, to taste
- Combine all the ingredients except the salt and pepper in a medium bowl and mix well.
- Add salt and pepper, to taste.
- Serve on tomato or zucchini slices or lettuce leaves and sprinkle with additional pepper.
NOTE: Store-bought hard-boiled eggs are a huge time-saver.
