Bacon Jam

1 pound sliced bacon

ВЅ teaspoon ground allspice

ВЅ teaspoon cayenne pepper

Pinch of ground nutmeg

Pinch of cracked black pepper

Вѕ cup canned diced petite tomatoes

ВЅ cup finely diced onion

Вј cup apple cider vinegar

Вј cup brandy (optional)

2 tablespoons honey

1 clove garlic, peeled and minced

  1. Cut the bacon strips into very small pieces.
  2. In a large saucepan, cook the bacon on medium-high heat for 10 to 12 minutes, or until the fat is rendered and the bacon starts to crisp.
  3. Add the allspice, cayenne pepper, nutmeg and pepper and cook, stirring, for 30 seconds.
  4. Add the rest of the ingredients.
  5. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  6. Use a slotted spoon to scoop the bacon jam into a container, leaving most of the liquid behind.
  7. Let cool to room temperature and serve however you choose.

NOTES: The brandy adds flavor and the alcohol in it cooks off, but you can certainly exclude it. If you make this ahead of time, store it in the refrigerator and bring it to room temperature before serving.
