Apple-Cucumber Relish

1 Granny Smith apple, peeled, cored and diced

1 cup peeled, diced English cucumber

ВЅ cup diced jicama

2 tablespoons unsweetened apple cider or apple juice

2 tablespoons fresh lime juice

2 tablespoons very finely minced red onion

ВЅ tablespoon minced fresh flat-leaf (Italian) parsley

  1. Combine all the ingredients in a medium bowl and mix well.
  2. Serve immediately, or cover and refrigerate until ready to serve.

VARIATIONS: We once grew some lemon cucumbers in our garden, which would be fantastic in this dish! Adding some red peppers for color would be super tasty,
as well.
