Chilled Melon Soup
1 medium cantaloupe, peeled, seeded and cubed
ВЅ cup unsweetened coconut milk
2 tablespoons freshly squeezed lime juice
2 tablespoons honey
4 teaspoons freshly squeezed lemon juice
Вј teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
Вј cup sliced, pitted cherries
Вј cup pistachios, toasted
- Place half of the cantaloupe in a blender and blend until smooth.
- Add the remaining cantaloupe and all the ingredients except the cherries and pistachios and blend until smooth.
- Pour the soup into bowls, garnish with the sliced cherries and pistachios, and serve at once, or chill until ready to serve.
NOTE: Buy precut melon to save time.
