Bacon And Okra Pilau
4 bacon strips, cut into ВЅ-inch pieces
1 onion, peeled and diced
1 medium green bell pepper, seeded, deribbed and diced
2 cups okra, cut crosswise into ВЅ-inch rounds
3 cups Cauliflower Rice
ВЅ teaspoon paprika
Вј teaspoon cayenne pepper
Salt and freshly ground black pepper, to taste
1ВЅ cups chicken stock
- Preheat a Dutch oven or a large skillet (with a lid) over medium heat, add the bacon and fry until crispy. Using a slotted spoon, remove the bacon from the Dutch oven to a plate lined with paper towels. Reserve the bacon grease in the Dutch oven.
- Add the onions and peppers to the Dutch oven in which the bacon was fried and sautГ© for 4 to 6 minutes, or until the onions soften. Mix in the okra, increase the heat to medium-high and then stir in the Cauliflower Rice, paprika, cayenne pepper, salt and pepper.
- Pour in the chicken stock, cover, and bring to a boil. Reduce the heat to low, cover and let simmer until most of the chicken stock has cooked off, about 10 minutes.
- Mix in the reserved bacon and serve hot.
