Basil Bacon tomato Bites
8 to 10 thick-cut bacon strips, cut into 1- to 2-inch pieces
10 to 12 fresh basil leaves, torn into 1-inch pieces
1 pint cherry, grape or Sungold tomatoes, halved crosswise
40 to 50 toothpicks
- Cook the bacon pieces in a large skillet or frying pan over medium heat until crispy. Drain on paper towels.
- To assemble, place a piece of bacon and basil in between two halves of a tomato. Secure with a toothpick. Repeat with the rest of the tomatoes, bacon and basil.
NOTE: Serve these bites with Quick Basil Pesto, a perfect dipping sauce.
VARIATION: If you’re eating dairy, adding some mozzarella in addition to the bacon and basil would be so tasty, especially if it’s drizzled with some olive oil and balsamic vinegar.
