Place the porcini mushrooms in a small bowl and pour the boiling water over them. Allow them to sit for 15 minutes.
After soaking, strain the mushrooms through a sieve over a bowl, reserving all the soaking liquid.
Meanwhile, heat the oil over medium heat in a large skillet that is already hot.
Once the oil is hot, add the pieces of steak and sear for a few minutes on each side, or until they are medium rare.
Using tongs, remove the steak bites to a plate and tent with aluminum foil to keep warm.
Reserve any fat in the pan.
Add the shallots to the same pan in which the steak was cooked, and sauté for about 1 minute, scraping up any of the browned bits from the bottom of the pan.
Add the baby bella or cremini mushrooms to the pan and sauté for about 3 minutes, or until the mushrooms just start to soften.
Add the garlic, the reserved porcinis, salt and pepper, and stir to combine.
Pour in the wine (or stock) and cook until the liquid has almost evaporated.
Stir in the reserved porcini soaking liquid, coconut milk and thyme, and cook for about 5 minutes, or until slightly thickened.
Serve the steak bites topped with the mushroom sauce. Feel free to serve extra sauce on the side!
