Ingredients

  • 1.0 tbsp Extra Virgin Olive Oil 0.5 oz / 15g
  • 1.0 pound Fresh Zucchini 16.0 oz / 454g or roughly 4.0 cups spiralized
  • 1.0 tsp Spice Mix 0.2 oz / 5g

Method

  1. Heat 1.0 tbsp. (0.5 oz / 15g) of extra virgin olive oil in a large sauté pan over medium-high heat until it shimmers.
  2. Add the spiralized zucchini noodles (16.0 oz / 454g) directly into the pan.
  3. Stir in 1.0 tsp. (0.2 oz / 5g) of your chosen spice mix, using tongs to toss the noodles so they are completely coated in the oil and seasoning.
  4. Cook the mixture for exactly 5.0 minutes, tossing occasionally, until the zucchini noodles are perfectly tender but still retain a slight bite.
  5. Remove from heat immediately, transfer to plates or bowls, and serve warm.
  6. Do Not Peel the Zucchini: Leave the skin on! Not only does it provide a beautiful, vibrant green color that pops on the plate, but it also helps the noodles hold their shape and provides extra fiber.
  7. Pat Them Dry: Zucchini is naturally composed of about 95% water.
  8. Before tossing them into the pan, gently pat your spiralized noodles dry with a clean paper towel to absorb any excess surface moisture.
  9. Sauté Fast and Hot: The goal is to warm the noodles and coat them in your delicious spices, not to boil them in their own juices.
  10. Keep your pan on medium-high heat and toss them quickly just until they are tender.
  11. Serve Immediately: These noodles are best enjoyed right off the stove.
  12. Letting them sit in the hot pan or a warm bowl for too long will cause them to release more water and become mushy.
