Preheat oven to 350 degrees

2. Thoroughly grease muffin tin or use silicone muffin pan.

3. Use a heaping spoon of sausage to make a nest on the outside edges of the muffin tin—use a thin layer around the edges so that there is room to drop in the egg. We recommend making one complete nest with an egg first before lining the rest to ensure you have enough space for the egg.

4. Open eggs one at a time and drop carefully into each lined egg cup.

Drizzle top of each egg with olive oil.

Bake at 350 degrees for 23-28 minutes, until eggs are cooked to your liking.

Let nests cool about 5 minutes, release the edges of the nests with a butter knife and pop them out.
