Thai Spice Blend

I bought a Thai spice blend once and was hooked! It was a rather expensive blend, so I decided to re-create it at home, and I love the way it turned out.

Prep time 10 minutes

Makes about 1/2 cup (50 g)

2 tablespoons (14 g) paprika

1 tablespoon turmeric

1 tablespoon coarsely ground black pepper

1 tablespoon ground coriander

1 tablespoon ground fenugreek

11/2 teaspoons dry mustard

11/2 teaspoons ground cumin

11/2 teaspoons ground ginger

1/2 to 3/4 teaspoon cayenne powder (to taste)

Shake ingredients together in an airtight container. Store at room temperature.
