3 TBSP coconut oil
Half of the shredded pork
1 TBSP Taco Seasoning
¼ cup water
Butter lettuce or romaine lettuce leaves
Half of the Mango Salsa
Ingredients made on “Prep Day”
In a large skillet over medium heat, heat the coconut oil.
Add the shredded pork, and stir to coat the pork with the oil.
Add the Taco Seasoning and water, and stir to combine.
Reduce the heat to low, and simmer, uncovered, until the pork is heated through.
Serve the shredded pork in lettuce cups with Mango Salsa spooned on top.
